The origins of this tradition are even older: in many countries, Mother’s Day as a symbol of a transition from the winter cold to the spring life where everything is reborn. Ingredients for eight people

300g flour

90g seed oil

1 sachet of baking powder

vanilla to taste

200g sugar

330g natural water

1 pinch of salt

Preparation

The preparation of this cake for Mother’s Day is very simple: just mix flour, baking powder and a pinch of salt in a bowl. Separately dissolve the sugar in the water at room temperature, then add the seed oil to this compound. Combine the mixture obtained with the powders, mixing well with a whisk.

-250 gr of flour

Preparation

-Walnuts 25 g

-Grated coconut 25 g

-Better sugar-free pineapple 50 g

-1 sachet of baking powder

-1 sachet of vanillin

-Philadelphia 150 g

-Icing sugar 100 g

-Juice of half a lemon

Preparation

Cook the carrots for five minutes in the water previously brought to a boil, drain and leave to cool. In the meantime, turn the oven to 180 ° and mix the flour, sugar, baking powder and cinnamon in a bowl. In another, the egg whites, oil, apple puree, and vanillin will be mixed with the electric mixer. When the cream is homogeneous, combine the 2 compounds to work them well. Once mixed, add the carrots, coconut, pineapple, and walnuts and mix.

Pour the mixture into the baking pan, previously buttered and floured. Cook for about an hour and then leave to cool completely.

In the meantime, prepare the cream for coating by mixing the cheese, lemon juice, and icing sugar with an electric mixer until the mixture is creamy.

Once the cake is cold use the cream obtained to cover it above and on the sides.
